Sometimes when I have no clue what to make I revert to my Italian roots (thanks mom).

I came up with this pasta on the fly tonight when I wanted something quick and easy. Grab some zucchine, frozen spinach, lemon, pecorino and parmigiano, and you’re set!

Recipe all’italiana (aka not many measurements)

1-2 zucchine
1 lemon (zest)
Juice of half a lemon
1-1 ½ cup frozen spinach
Pasta of your choosing
½-1 cup parmigiano
¼-½ cup pecorino
Salt
Pepper
Garlic powder

1. While you set a pot of water to boil start sautéing your zucchini in some olive oil until brown (flip so each side browns).
2. Add in frozen spinach, pepper, and garlic powder DO NOT ADD SALT YET.
3. Once pasta is ready reserve some pasta water, move everything to a serving bowl, add in lemon juice, zest, cheese, and salt.
4. Add in a bit of pasta water as needed if the pasta gets dry.
5. Add a little more parmigiano on top to serve with a scrunch of pepper and you’re set!!

Took me less than 30 minutes and tasted great!

These peanut butter banana muffins are perfectly sweet while still feeling “healthy”

Recipe

3 ripe bananas
3 eggs
⅓ cup peanut butter (or any nut butter of your choice)
1 cup almond flour
¼ cup coconut flour
1 teaspoon baking soda
1 teaspoon baking powder
Pinch of salt
½ cup chocolate chips (measure with your heart 🤫)

1. Put all ingredients except for chocolate chips into a blender and blend until smooth.
2. Fold in chocolate chips.
3. Pour into greased or lined cupcake trays.
4. Bake at 350°F for 20-25 minutes or until an inserted toothpick comes out clean.
5. Enjoy!

These chocolate chip cookies are the easiest and tastiest in my book!

Recipe

2 ⅓ cups flour
1 teaspoon baking soda
1 tablespoon cornstarch
½ teaspoon salt
1 tablespoon vanilla
¾ cup butter (melted)
1 cup brown sugar
½ cup granulated sugar
1 egg + 1 yolk (room temp)
1 ½ cup chocolate chips

1. Start by melting the butter and letting it cool
2. Combine brown sugar, granulated sugar, vanilla, and egg + yolk
3. Once butter is cooled add to sugar egg and vanilla mixture
4. Add in dry ingredients
5. Fold in chocolate chips
6. Form into balls and chill in freezer for 30 mins
7. Bake at 325°F for 13-17 minutes (until lightly golden brown)
8. Cool and enjoy!!

I don’t know about you guys but I pretty much ALWAYS have to have a sweet after a meal (really after anything salty 😁), and if it’s a quick fix that’s even better!

Tried out @callascleaneats recipe for Banana Oat Chocolate Chunk bars! Highly recommend, perfectly gooey and sweet 🍓

Recipe
2.5 cups oats
2 eggs
2 ripe bananas
1 cup almond milk
1 teaspoon baking soda
1 teaspoon vanilla
½ teaspoon cinnamon
½ teaspoon salt
2 tablespoons melted and cooled coconut oil
1 cup chocolate chips

Set oven to 350°F.
Mash bananas and add all the rest of the ingredients with the oil and chocolate chips added last.
Bake for 30-45 minutes.

I added coconut and strawberries to serve!
